Before the doors opened to where the pancakes are in 2016, the location at Flat Iron Square in London Bridge was an empty stretch of brown, derelict land. Visiting the site, founder Patricia Trijbits found the words “Good as Gold” dripping down in graffiti from a high brick wall.
Despite the gritty first impression, Patricia’s own experiences of food had given her conviction that an honest meal can go a long way. Her reimagined menu of modern pancakes would help revive this lost bit of London with generosity and heart.
